THE LAST. MID-DAY. UPDATE.

I'm starting to think I should just post my blogs at night instead of constantly updating the same entry or titling an entry 'update on this' and that etc. So here's the last update during the day. Here's my second meal of the day (yesterday - if you didn't get the above memo). JUST KIDDING!

Mom's homemade potato and leek soup. No cream, she used milk - I'm wondering to myself if it would work if I attempted the recpe with almond milk and made it vegan? Thoughts? It was delicious by the way. I can feel my stomach rumbling right now. But that could also be because I only had a carrot stick for breakfast and a strawberry. Whoops.

Another one of my favourites that mom makes - beef stew with potato, beef (obvi), carrots, turnip and parsnip. She let the meat cook in the broth for hours so it was super tender. *mouth watering* I tried to make the same recipe but vegetarian only and I incorporated Yves breakfast sausages - barf. It was disgusting. I have to re do this recipe PROPERLY.

Lastly, here's my fitness update. Yesterday was strictly cardio. Like I said in my previous entry, walked on my lunch with Kristina who now I'm making up this nickname - K-STAR! I laugh to myself. Yep. It's happening.
ANYWHO-
I also danced off with my mom to Just Dance 4 and did a 'Cool as a cucumber' 25 minute workout between cool down and intense. It got me sweating by the end.. it ended with yoga poses. That half moon pose gets me EVERY. SINGLE. TIME.

Today is Friday and I am NOT fasting. Although I made my protein shake 2 days ago and as I make a disgruntled face I am sincerely hoping it still tastes okay and isn't chunky and just .. ick. I made it with vegan chocolate shakeology, 1/2 almond milk and 1/2 water. I didn't blend it - I just shook it up with one of those protein shaker ball things. Can you tell I'm a fitness noob?

Hang tight. I'm going to grab this.

I have it. It looks like it settled. I feel like it's completely watered down.. a bit scared to even try it. Here's a picture of it:

The first picture is not so bad. Looks like a regular shake. However the second one.. not so much. I don't like seeing the particles in the shake. It looks a bit off.

With that being said, it's actually not bad. It's weird because if I were to blend it, it usually tastes chunky and weird the following day - even after being refrigerated but today - it's been in the shaker cup, refrigerated a few days and it's normal. Figure that one out because I sure can't. lol.

So today I won't be making it to the gym. I have a couple errands to take care of. I still have to cancel my credit card after a short shift at work (yes it's my day off and I'm here notifying the hospital of a last minute cancellation) then I'll be walking - in the rain - from the bank to my parents place. Depending on time I'll hang out with them for a bit and if there's no time, mama biss and I will go to the alterations appointment. Eek! I'm a little terrified my dress won't fit the way I want it to. Again, last week and the week prior I wasn't at the gym and mostly eating crap. But really - how much can your skin and fat change in 2 weeks? No really, I'm asking - I'm not sure at all.

It's funny because last night my mom could tell from the look upon my face that I was stressed about this dress. So she turns to me and says, "honey, you're gorgeous". I grin. "I know I'm good looking, it's just my double chin and my gut". 😊  It's true though. If there were certain exercises that target an area, I'm all for it. But unfortunately - life doesn't quite work out that way.

I'm back to leg day today - squats, squats and more squats + little cardio. I really do need to focus on squats, I feel like I'm losing my booty. I guess I better continue to work. Stay tuned! .. because I'll write again later this evening about the rest of my en devours.

Update on goals

Hello again. It's meeee... 🙃 Okay so goal 1 ✔️ Completed Speed 1.0 with mama bear. I completed the day with 10,162 steps. My dessert was literally a sliver of cake (sister called it a crumb) haha with 2 tablespoons of Greek yogurt, few strawberries and walnuts. And I made a low carb lasagna and guess what? It was a huge success! So my mom makes this beautiful hollandaise based lasagna with chicken and asparagus. I took it upon myself to grad 1/2 cauliflower head and grated the stems of broccoli as my base. Did a layer of the sauce, chicken, asparagus, broccoli, cheese, and added (4) spinach noodles for texture. Topped it with Parmesan cheese and BOOM. Magic was born. Other lasagnas for the family included turkey with tomato sauce, and then (2) variations of the hollandaise other than my own- one with broccoli and the other asparagus. I was absolutely thrilled to find out mine was a success. Especially since I thought it was going to be like soup. Don't forget that when ...

Updates and Basil, Cilantro, Garlic Bread

I realize I haven't blogged in quite some time. Here's some updates since my last blog: - I moved - It wasn't my choice but it had to be done. The lady that owned our condo wanted us to buy it or leave. So we left (there were way too many things to be fixed and wasn't worth our time, energy and money). Now I live in the basement of my mother in law's home with my boyfriend, Jack. - I no longer consume animals or animal by products. I'm 90% vegan and I say 90 % because I cannot consume vegan cheese. Has anyone ever tried it? IT'S LEGIT THE SCUM OF THE EARTH. I eat cheddar cheese (only) once, twice or three times a month. So let's get down to business, to the reason why I made you come to this entry on my blog. The main way I cook in this basement is with my slow cooker. I came across a recipe on Pinterest for Vegan basil pesto bread which obviously sounds delicious. *Word to the non - vegans, pesto contains parmesan. There was a recipe to make vegan...

Phew. Really dodged a bullet there.

PRAISE THE LORD. Hallelujah! I was so prepared to blog earlier today about how nervous I was regarding this afternoon. I had a killer workout / training session planned with a friend and it was just confirmed that it's cancelled and we both rescheduled for next Wednesday. Just thinking about it was giving me an anxiety attack (okay that was far fetched) but it gave me the sweats! This woman was training with a Personal Trainer at GoodLife Fitness so the workouts are intense and now she makes her own loosely based on the PT she had prior. She was afraid to tell me what part of the body we would workout because she thought I would cancel! I'm always up for the challenge I'm just terrified of trying new things (alone). If I have a partner or someone there with me, it's not so bad but doing something new without any guidance and possibly "failing" .. I'm not into. Speaking of trying something new, I'm 99.9 % sure I'm going to try boxing. There'...
