Exhausted.

I am definitely feeling the after affects of eating crappy foods.

Do you ever feel oddly tired? Especially since you're well rested and haven't over worked your body..? That's me right now. Although it's not odd at all. I noticed when I eat foods that have little to zero nutritional value my body reacts in a sluggish state. Over the weekend I indulged to a point where I just feel exhausted. I'm staring at the computer blogging and I can barely keep my eyes open. It's lunch time thank goodness so I could take a nap if I wanted to. However, that would be such a tease to my eyes and mental state.

Today started off super frustrating as my co-worker did not show up. Generally Monday's are insanely busy. The office is closed on Fridays so we have messages from Thursday evening all the way up until Sunday night. The number of messages ranges between 20-40 and usually 30 (or so) fax messages. Returning those messages alone while having the phones ringing in between is a tad difficult. Then you have the patients "I left a message and no one called me back" WELL DUH. You left a message over the weekend, I just got in and I'm trying to CHECK the messages. Sometimes I wish my patients just read the blog so they could understand the life of a receptionist / administrative assistant. Then again, I really don't want them to know things that I'm going through that I just want to rant on here.

Blogging I find is just .. so therapeutic. It doesn't even matter if anyone reads it, it's just nice to have a journal and express myself. I used to express myself in harmful ways and I'm just not about that lifestyle anymore.

Currently I have a headache. And now that the messages are taken care of and I sent the intern home (it's already started to snow) it's getting pretty dead / slow in the office. I'm thinking of leaving early myself. If the weather gets bad and I'm taking transit to my parents place, I don't want to be waiting out in the cold having Mr. Jack Frost nipping at my bare skin. Sometimes I think I should get a ski mask but then it's like, "It's March.. winter is almost done. I'll just get one next year". But it feels like winter is never going to be over!

Before I forget let's skip to food. I haven't eaten much today. Honestly, I think my body is still recovering from the foods on the weekend:
Breakfast: Protein shake
Snack / lunch: Couple bites of a brownie flavoured protein bar

Are we noticing a pattern here? Okay okay, I haven't consumed a lot of protein on the weekend and I wanted to make up for it! Did you know when you eat protein you actually BURN CALORIES while eating it? It's like your body is doing the workout for you as you sit there and eat. This is why trainers and nutritionists will tell you to snack on a protein shake before bed if you are starving because it's almost like saying 'zero calories'. I'll update in this post later if I make it to mom/dad's and hopefully able to get in a workout (inside - definitely not outside)! Stay tuned.

Few more pictures from the weekend. This was our waffle bar ♡

Update on goals

Hello again. It's meeee... 🙃 Okay so goal 1 ✔️ Completed Speed 1.0 with mama bear. I completed the day with 10,162 steps. My dessert was literally a sliver of cake (sister called it a crumb) haha with 2 tablespoons of Greek yogurt, few strawberries and walnuts. And I made a low carb lasagna and guess what? It was a huge success! So my mom makes this beautiful hollandaise based lasagna with chicken and asparagus. I took it upon myself to grad 1/2 cauliflower head and grated the stems of broccoli as my base. Did a layer of the sauce, chicken, asparagus, broccoli, cheese, and added (4) spinach noodles for texture. Topped it with Parmesan cheese and BOOM. Magic was born. Other lasagnas for the family included turkey with tomato sauce, and then (2) variations of the hollandaise other than my own- one with broccoli and the other asparagus. I was absolutely thrilled to find out mine was a success. Especially since I thought it was going to be like soup. Don't forget that when ...

Updates and Basil, Cilantro, Garlic Bread

I realize I haven't blogged in quite some time. Here's some updates since my last blog: - I moved - It wasn't my choice but it had to be done. The lady that owned our condo wanted us to buy it or leave. So we left (there were way too many things to be fixed and wasn't worth our time, energy and money). Now I live in the basement of my mother in law's home with my boyfriend, Jack. - I no longer consume animals or animal by products. I'm 90% vegan and I say 90 % because I cannot consume vegan cheese. Has anyone ever tried it? IT'S LEGIT THE SCUM OF THE EARTH. I eat cheddar cheese (only) once, twice or three times a month. So let's get down to business, to the reason why I made you come to this entry on my blog. The main way I cook in this basement is with my slow cooker. I came across a recipe on Pinterest for Vegan basil pesto bread which obviously sounds delicious. *Word to the non - vegans, pesto contains parmesan. There was a recipe to make vegan...

Goals

Every day I try to accomplish mini goals. Today isn't just a regular day. Not like any other day.. no no no. It's a family get together. Family get togethers are like "it's someone's birthday you can have a little" "it's a celebration, have some wine / booze it would be a sin not to" "why aren't you having any of my birthday cake? So rude. Just a sliver!" Etc. I am thankful that my family understands and respects my choices of lifestyle. Not every family does. And some people just don't have the self control / will power. I get that. I've been down that road many times. And this is why I make mini goals. With that being said, today I propose to you my mini goals and then I will blog by the end of the night (or tomorrow) if I achieved them and what exactly happened... 1. Complete Speed 1.0 2. Reach 10,000 steps (even though my goal is 13,000.. usually on weekends I barely make it to 7,000) 3. Stay low carb 4. ACTUALL...
