ZzzZzzz...ZzzZzz...

Guys, I'm so bored. Words cannot even express how bored I am. It seems like hours since the phone has last rung and even then it was the quickest conversation.

It's March Break - generally during this time people are away or have their kids and off doing whatever and no one thinks about calling their specialist's office to schedule an appointment so it's completely dead. I have already re-organized the office, thrown out old magazines and prepared for next week's clinic.

Currently I am waiting for our cleaning lady to come to the office so I can show her new things to clean. Other than that, it's quiet and boring. I am expecting to see a tumbleweed float by. There is actually a huge pile of charts to be scanned. I could actually do that, and leave the charts to be filed in our electronic system by the intern. Short entry this morning. Guess I better make use of my time and hop to that. Thanks for the pep talk.

PS: This was my dinner last night. I was a bad little b*tch. I ate NINE slices. And then I finished the remaining 3 this morning for breakfast. When I'm dedicated to a goal - I really go for it. And this week I said I'm not going to the gym or eating well. This is exactly what happens when I don't meal prep on the weekend - I screw myself. Legit. #noregrets


Breakfast in combination with (3) pizza slices, I also had 2 slices of watermelon chopped up. I keep telling myself if I'm going to eat crap at night I might as well be a good girl in the morning / day time.


It may not be your friday but for me, technically it is. Jealous? I bet! I would be too. A 3 day weekend EVERY weekend.

Update on goals

Hello again. It's meeee... 🙃 Okay so goal 1 ✔️ Completed Speed 1.0 with mama bear. I completed the day with 10,162 steps. My dessert was literally a sliver of cake (sister called it a crumb) haha with 2 tablespoons of Greek yogurt, few strawberries and walnuts. And I made a low carb lasagna and guess what? It was a huge success! So my mom makes this beautiful hollandaise based lasagna with chicken and asparagus. I took it upon myself to grad 1/2 cauliflower head and grated the stems of broccoli as my base. Did a layer of the sauce, chicken, asparagus, broccoli, cheese, and added (4) spinach noodles for texture. Topped it with Parmesan cheese and BOOM. Magic was born. Other lasagnas for the family included turkey with tomato sauce, and then (2) variations of the hollandaise other than my own- one with broccoli and the other asparagus. Updates and Basil, Cilantro, Garlic Bread

I realize I haven't blogged in quite some time. Here's some updates since my last blog: - I moved - It wasn't my choice but it had to be done. The lady that owned our condo wanted us to buy it or leave. So we left (there were way too many things to be fixed and wasn't worth our time, energy and money). Now I live in the basement of my mother in law's home with my boyfriend, Jack. - I no longer consume animals or animal by products. I'm 90% vegan and I say 90 % because I cannot consume vegan cheese. Has anyone ever tried it? IT'S LEGIT THE SCUM OF THE EARTH. I eat cheddar cheese (only) once, twice or three times a month. Goals

Every day I try to accomplish mini goals. Today isn't just a regular day. Not like any other day.. no no no. It's a family get together. Family get togethers are like "it's someone's birthday you can have a little" "it's a celebration, have some wine / booze it would be a sin not to" "why aren't you having any of my birthday cake? So rude. Just a sliver!" Etc. I am thankful that my family understands and respects my choices of lifestyle. Not every family does. And some people just don't have the self control / will power. I get that. I've been down that road many times. And this is why I make mini goals. With that being said, today I propose to you my mini goals and then I will blog by the end of the night (or tomorrow) if I achieved them and what exactly happened... 1. Complete Speed 1.0 2.
