Tuesday's come and go in the blink of an eye.

I don't think I could ever blog on a Tuesday unless I get another computer / fix my laptop. Tuesday's are the most absolute insane day of the week by far.. Tuesday mornings I'll arrive at the office by 8:00 am. Clean a bit, and hope to God no patient's come early. I'll plug in the radio, check the messages (and return them), leave out the washroom keys and set up the paperwork just in time for the first few patients to arrive. We start clinic at 9:00 am sharp and it goes until about 1:40 pm. Yesterday I had scheduled an assessment - this is where a patient has gotten into a Motor Vehicle Accident (MVA) or some sort of accident has occurred to them ie, dog bite, which in turn has scarred them for life - not only physically but mentally as well. It's sad really.. but needless to say, it was a busy day.

There used to be times it would be so busy, I would just happen to look at the time and it's like "shit, it's 2 pm and I haven't eaten anything ALL day". Thankfully I've been trying to listen to my body so when I start to feel the rumble, I will drink some water, let it sit and if the rumble comes back I eat.

Here's my food diary from yesterday:
Breakfast: Bran muffin + 1/2 protein shake
Snack: Celery, few bites of baked sweet potato
Lunch: Stuffed orange pepper
Snack: 1/2 protein bar, clementine
Dinner: 1 pint of Molson Canadian, sweet potato fries (shared with mama B), salad and (4) breaded and sauced wings. I gave the leftovers to Jack, and so did my mom (aka Mama B)
Side note - yesterday's dinner was not my cheat meal. I didn't have carbs at all yesterday so the breading on the wings didn't count as anything. NOOOTTTHIIINNNG =)

Went to bed early in hopes of going to the gym today but my body needed and wanted sleep. Walked in the rain for 30 minutes (which was the only lunch break I had).. it was still a break though so I can't complain.

Today is Wednesday AKA Post Tuesday. Time to call the patients for booking major surgery in the O.R. and faxing out referrals... I'll try to blog again after my intern leaves. Stay tuned.
PS: No gym yesterday.

Update on goals

Hello again. It's meeee... 🙃 Okay so goal 1 ✔️ Completed Speed 1.0 with mama bear. I completed the day with 10,162 steps. My dessert was literally a sliver of cake (sister called it a crumb) haha with 2 tablespoons of Greek yogurt, few strawberries and walnuts. And I made a low carb lasagna and guess what? It was a huge success! So my mom makes this beautiful hollandaise based lasagna with chicken and asparagus. I took it upon myself to grad 1/2 cauliflower head and grated the stems of broccoli as my base. Did a layer of the sauce, chicken, asparagus, broccoli, cheese, and added (4) spinach noodles for texture. Topped it with Parmesan cheese and BOOM. Magic was born. Other lasagnas for the family included turkey with tomato sauce, and then (2) variations of the hollandaise other than my own- one with broccoli and the other asparagus. I was absolutely thrilled to find out mine was a success. Especially since I thought it was going to be like soup. Don't forget that when ...

Updates and Basil, Cilantro, Garlic Bread

I realize I haven't blogged in quite some time. Here's some updates since my last blog: - I moved - It wasn't my choice but it had to be done. The lady that owned our condo wanted us to buy it or leave. So we left (there were way too many things to be fixed and wasn't worth our time, energy and money). Now I live in the basement of my mother in law's home with my boyfriend, Jack. - I no longer consume animals or animal by products. I'm 90% vegan and I say 90 % because I cannot consume vegan cheese. Has anyone ever tried it? IT'S LEGIT THE SCUM OF THE EARTH. I eat cheddar cheese (only) once, twice or three times a month. So let's get down to business, to the reason why I made you come to this entry on my blog. The main way I cook in this basement is with my slow cooker. I came across a recipe on Pinterest for Vegan basil pesto bread which obviously sounds delicious. *Word to the non - vegans, pesto contains parmesan. There was a recipe to make vegan...

Phew. Really dodged a bullet there.

PRAISE THE LORD. Hallelujah! I was so prepared to blog earlier today about how nervous I was regarding this afternoon. I had a killer workout / training session planned with a friend and it was just confirmed that it's cancelled and we both rescheduled for next Wednesday. Just thinking about it was giving me an anxiety attack (okay that was far fetched) but it gave me the sweats! This woman was training with a Personal Trainer at GoodLife Fitness so the workouts are intense and now she makes her own loosely based on the PT she had prior. She was afraid to tell me what part of the body we would workout because she thought I would cancel! I'm always up for the challenge I'm just terrified of trying new things (alone). If I have a partner or someone there with me, it's not so bad but doing something new without any guidance and possibly "failing" .. I'm not into. Speaking of trying something new, I'm 99.9 % sure I'm going to try boxing. There'...
