It's meal prep time people!

What a busy weekend.

Some days I'm sad because I have no plans for the weekend so I usually grab some wine, Kristina and play Just Dance (and also go to the gym in the morning) but then other weekends like this past weekend I'm busy!! I love having plans but when it cuts into my meal prep time I feel incredibly lost the entire week - like I go out after the gym and have a 12 inch sub or end up at Swiss Chalet and just binge on all the calories I worked off - like sure, yeah, maybe I "earned" it but really I'm maintaining my body and the whole purpose of my meal prep and working out is to change my body. My end goal for this journey is to appreciate myself inside and out - it's a slow process but I'm not helping myself by going out and skipping out on my meal prep.

Well it's not really "skipping" the meal prep more so I have too many plans therefore no time for the meal prep part!

This weekend I had (2) bridal showers for Christine + my sister in law's birthday dinner. I kind of wished it was the same day but it wasn't. And to top it off, I missed out on Nikki's birthday. I thought this would be the year I finally make it out. Nikki's birthday is March 28 and Jessica's (sister in law) is March 24th. I thought for sure Nikki would celebrate her birthday the first weekend in april after her birthday but as luck would have it - the cards did not play out the way I had thought. So this year I want to make it special. I can't post what I want to plan just in case if she's reading ! Jack has a bachelor party downtown on Saturday so I'll have the place to myself. I'm really hoping to make my spicy peanut satay meatballs MEATLESS! Maybe one year make it vegan - but let's not get crazy.

Back to meal prep.

My go to for meal prep. Large ziploc bag of romaine, shredded carrots, separate bag of croutons and ranch dressing. I don't have cucumber on hand. Unfortunately it grew mould! So nope refuse to use that sh*t. 


(2) bunches of asparagus, broke off the woody parts then cut in half. Seasoned with salt, pepper and contradictory salt free mrs dash garlic and herb. EVOO + sprayed some non stick spray on the baking sheet. 25 minutes at 400 in the oven and you have some delicious roasted asparagus. 


Recipe for Santa Fe chicken. Sadly I forgot to get instant rice - guess mine will be EXTRA runny as I will be making my brown rice separate on the stove top. 


$47 for 10 meals - lunch and dinner. And some people complain that "eating healthy" is expensive. 


We also got some deli sliced meats and ancient grains bread which is not included in the picture since we will not be needing bread and meats for the recipe. I will post the end results tomorrow when I show off my lunch. As for now, I'm going to continue cooking, enjoy a glass of wine (or a few) and rock out to one of my all time favourite bands, Linkin Park. Stay tuned.

Update on goals

Hello again. It's meeee... 🙃 Okay so goal 1 ✔️ Completed Speed 1.0 with mama bear. I completed the day with 10,162 steps. My dessert was literally a sliver of cake (sister called it a crumb) haha with 2 tablespoons of Greek yogurt, few strawberries and walnuts. And I made a low carb lasagna and guess what? It was a huge success! So my mom makes this beautiful hollandaise based lasagna with chicken and asparagus. I took it upon myself to grad 1/2 cauliflower head and grated the stems of broccoli as my base. Did a layer of the sauce, chicken, asparagus, broccoli, cheese, and added (4) spinach noodles for texture. Topped it with Parmesan cheese and BOOM. Magic was born. Other lasagnas for the family included turkey with tomato sauce, and then (2) variations of the hollandaise other than my own- one with broccoli and the other asparagus. Updates and Basil, Cilantro, Garlic Bread

I realize I haven't blogged in quite some time. Here's some updates since my last blog: - I moved - It wasn't my choice but it had to be done. The lady that owned our condo wanted us to buy it or leave. So we left (there were way too many things to be fixed and wasn't worth our time, energy and money). Now I live in the basement of my mother in law's home with my boyfriend, Jack. - I no longer consume animals or animal by products. I'm 90% vegan and I say 90 % because I cannot consume vegan cheese. Has anyone ever tried it? IT'S LEGIT THE SCUM OF THE EARTH. I eat cheddar cheese (only) once, twice or three times a month. So let's get down to business, to the reason why I made you come to this entry on my blog. The main way I cook in this basement is with my slow cooker. Phew. Really dodged a bullet there.

PRAISE THE LORD. Hallelujah! I was so prepared to blog earlier today about how nervous I was regarding this afternoon. I had a killer workout / training session planned with a friend and it was just confirmed that it's cancelled and we both rescheduled for next Wednesday. Just thinking about it was giving me an anxiety attack (okay that was far fetched) but it gave me the sweats! This woman was training with a Personal Trainer at GoodLife Fitness so the workouts are intense and now she makes her own loosely based on the PT she had prior. She was afraid to tell me what part of the body we would workout because she thought I would cancel! I'm always up for the challenge I'm just terrified of trying new things (alone). If I have a partner or someone there with me, it's not so bad but doing something new without any guidance and possibly "failing" .. I'm not into.
