Almost vegetarian shepherd's pie.

This shepherd's pie would have been 100% vegetarian if and only if I had vegetable broth. Instead I used beef broth. For this recipe I used: onion, broccoli, Bok choy and corn. I also used original veggie ground (by Yves) for the "meat" and cauliflower for the "mashed potato" portion.

The recipe I used was by Simply and I literally googled "easy shepherds pie". Once I noticed the temperature and time for the oven everything else was history. I made up my own recipe. Add "whatever I feel like" amount of vegetables, "meat" and broth to keep everything moist then add to the baking dish for the bottom layer.

The part that I always forget takes the longest is waiting for the veggies to get soft... soft enough to mash them. It seemed like it took an hour of our burner takes awhile to get hot. Man! But worth the wait. The "meat portion" was done I got thinking - it would be so nice to give someone an additional portion.. so I added a second package of veggie ground and added more vegetables.

Tidbit: 2 years ago I had said to my sister in law (and to my sisters as well) that I would provide every 3 months with a kid friendly meal - and a healthy one at that) to make it easier on them. And just never did it. I don't know why, I don't have any excuse I just never made it happen until now.

Crossing my fingers even the kids like it! So their batch might be a bit bland - I like a lot of pepper so I didn't bother adding that. And when my batch came out - omg sooo mouth watering ! we should have just had that for dinner but I told myself already tbat I was cheating all day with wine , might as well have company of some sort of take out. And pizza it was with dipping sauce.

Today will be different though. Got my workout gear on and ready to do all day cardio (outside).
Ps- I did indulge in (2) square slices of pizza. But I'm done now, nothing is holding me back today! Stay tuned...

Update on goals

Hello again. It's meeee... 🙃 Okay so goal 1 ✔️ Completed Speed 1.0 with mama bear. I completed the day with 10,162 steps. My dessert was literally a sliver of cake (sister called it a crumb) haha with 2 tablespoons of Greek yogurt, few strawberries and walnuts. And I made a low carb lasagna and guess what? It was a huge success! So my mom makes this beautiful hollandaise based lasagna with chicken and asparagus. I took it upon myself to grad 1/2 cauliflower head and grated the stems of broccoli as my base. Updates and Basil, Cilantro, Garlic Bread

I realize I haven't blogged in quite some time. Here's some updates since my last blog: - I moved - It wasn't my choice but it had to be done. The lady that owned our condo wanted us to buy it or leave. So we left (there were way too many things to be fixed and wasn't worth our time, energy and money). Now I live in the basement of my mother in law's home with my boyfriend, Jack. - I no longer consume animals or animal by products. I'm 90% vegan and I say 90 % because I cannot consume vegan cheese. Goals

Every day I try to accomplish mini goals. Today isn't just a regular day. Not like any other day.. no no no. It's a family get together. Family get togethers are like "it's someone's birthday you can have a little" "it's a celebration, have some wine / booze it would be a sin not to" "why aren't you having any of my birthday cake? So rude. Just a sliver!" Etc. I am thankful that my family understands and respects my choices of lifestyle. Not every family does. And some people just don't have the self control / will power. I get that. I've been down that road many times. And this is why I make mini goals. With that being said, today I propose to you my mini goals and then I will blog by the end of the night (or tomorrow) if I achieved them and what exactly happened... 1. Complete Speed 1.0 2. Reach 10,000 steps (even though my goal is 13,000.. usually on weekends I barely make it to 7,000) 3. Stay low carb 4. ACTUALL...
