Meal prep morning

So today marks the second day I'm assisting my brother. Today I'm not nervous. Why you might ask? He texts me sometime last night (because you know I'm already passed out by 8:30 pm) to ask if I want to join in for a Shaun T workout. OBVI.

My brother was the one to introduce me to Insanity! He even burnt multiple discs of the workout. It's funny though - I asked him if his workouts are longer than 25 minutes because I started doing Focus T 25 ... and he's like " well I want to do a full workout but bring it anyways". Dude doesn't know that T25 makes Insanity look like child's play... Aint he in for a TREAT!

I look in the fridge and realize we literally have nothing. Like I can tell you right now what's in the fridge - a huge container of water, another huge jug of iced green tea, shit load of condiments, baking yeast (been there for almost 3 years) lol I swear I meant to make bread and just kept forgetting... until now. Umm..minced garlic, butter (is that a condiment?), almond milk and chicken broth.

The freezer on the other hand has all the goods - frozen fruit, vegetables, bananas, Yves soy 'meat', and ice. I think I'm forgetting something but I seriously don't want to get up to check.

Since I don't have any food prepped, I grabbed 2 red potatoes - the very last 2, slice and dice them up and no I didn't wash them and this is how I'm building my immune system. Ha! Okay and added Extra virgin olive oil, Mrs dash salt free garlic and herb seasoning and pepper. I can even hear it in the oven right now - it's making that high pitched noise due to high temperature.. or maybe our oven is extremely old.

While that's roasting, I chucked 1/2 bag of frozen mixed veggies into a microwave safe bowl with 6 tablespoons of water. Microwaved 4 minutes, added 1 teaspoon of garlic and a dash of lemon juice then popped the veggies back in for 5 minutes.
Currently waiting for it to cool so I can add it to my container for my lunch (and also snag a couple bites as a quick breakfast).

BUT WHERE'S THE PROTEIN THO?
Don't worry kiddos, I'm making a protein shake as well. This will be my morning snack because my brother is in the process of moving his company and the fridge is already taken to the other location. Did you know that chicken can only stay out for 4 hours before it starts developing salmonella? Yeah I didn't know that.. but that's chicken. Still, after the week in the fridge for my poor protein shake that other time I just don't want to f*ck that shit up again so I want to drink my protein shake FIRST when I get hungry.

I also packed an apple and unsalted nuts for a snack today. Timer just went off for the potatoes!! Stay tuned.

Update on goals

Hello again. It's meeee... 🙃 Okay so goal 1 ✔️ Completed Speed 1.0 with mama bear. I completed the day with 10,162 steps. My dessert was literally a sliver of cake (sister called it a crumb) haha with 2 tablespoons of Greek yogurt, few strawberries and walnuts. And I made a low carb lasagna and guess what? It was a huge success! So my mom makes this beautiful hollandaise based lasagna with chicken and asparagus. I took it upon myself to grad 1/2 cauliflower head and grated the stems of broccoli as my base. Did a layer of the sauce, chicken, asparagus, broccoli, cheese, and added (4) spinach noodles for texture. Topped it with Parmesan cheese and BOOM. Magic was born. Updates and Basil, Cilantro, Garlic Bread

I realize I haven't blogged in quite some time. Here's some updates since my last blog: - I moved - It wasn't my choice but it had to be done. The lady that owned our condo wanted us to buy it or leave. So we left (there were way too many things to be fixed and wasn't worth our time, energy and money). Now I live in the basement of my mother in law's home with my boyfriend, Jack. - I no longer consume animals or animal by products. I'm 90% vegan and I say 90 % because I cannot consume vegan cheese. Has anyone ever tried it? IT'S LEGIT THE SCUM OF THE EARTH. I eat cheddar cheese (only) once, twice or three times a month. PRAISE THE LORD. Hallelujah! I was so prepared to blog earlier today about how nervous I was regarding this afternoon. I had a killer workout / training session planned with a friend and it was just confirmed that it's cancelled and we both rescheduled for next Wednesday. Just thinking about it was giving me an anxiety attack (okay that was far fetched) but it gave me the sweats! This woman was training with a Personal Trainer at GoodLife Fitness so the workouts are intense and now she makes her own loosely based on the PT she had prior. She was afraid to tell me what part of the body we would workout because she thought I would cancel! I'm always up for the challenge I'm just terrified of trying new things (alone). If I have a partner or someone there with me, it's not so bad but doing something new without any guidance and possibly "failing" .. I'm not into.
